spring fennel salad with radish and persian cucumber
ingredients (for 4 servings):
- 4 -5 small fennel bulbs
- 8-10 organic radishes
- 3 persian cucumbers
- 3-4 green onions
- small bunch of fresh tarragon
for dressing:
- 2-3 tablespoons extra virgin olive oil or walnut oil
- 2 teaspoons dijon mustard
- sea salt, cracked pepper (to taste)
- 1 (small) meyer lemon, freshly juiced
- 1-2 teaspoons raw organic honey
