deliciously good for you chia seed pudding (yes, chichichi...chiaaaaaa)!

yes, this is THE chia seed...the one used for the infamous chia pets...but i can't stop hearing about how good these little seeds are for you-so i thought i'd give them a try. they add a nice crunch (and flavor, believe it or not) to your cereal or salad, but i wanted to try them in a pudding. this is what the package says about them:

i can't tell you how simple it is to make this (somewhat addictive) pudding. all you need is:

1/2 cup chia seeds (mine are organic heirloom quality)
2 cups good quality (as in minimal additives) coconut milk
3 tablespoons raw (real) honey or agave nectar
1 tsp freshly squeezed lemon juice, or lemon/orange zest (easy using microplane)
1/2 to 1 tsp good vanilla extract
1-2 tsps cinnamon
fruit/berry of choice for topping

combine and mix the honey, coconut milk, vanilla, and lemon juice(or zest) in a jar (with lid), and shake it to mix them well. add the chia seeds,
mix well, then refrigerate for at least 4 hours. you are ready to serve it topped with cut up fruit or berries, cinnamon, and a drizzle of raw honey.
simple as that!
