french toast, happy kids
if and when i want to make my kids very happy in the morning, i cook them a special breakfast- (or in other words, and to be more clear, when they complain that i never make them a good breakfast while all other parents are serving up feasts to their children ). my go to special breakfast item is a quick and easy french toast. the best bread to use for this recipe is a soft and sweet brioche, but any sliced bread you have on hand (including sprouted wheat-but not for the kids, that might be pushing it) works perfectly. for a single french toast you quickly whisk (with a whisk or fork) together:
1 large organic egg
1/4 cup milk (or cream if you are not worried about the extra fat/calories)
1/2-1 tsp cinnamon
a pinch of sea salt
1 tbsp butter (or so) for frying
soak your bread in the mixture for about a minute on each side. melt butter in your frying pan and (carefully) transfer your soaked bread to the pan. fry (on medium heat) for about 1-2 minutes on each side being careful it doesn't burn. serve with maple or agave syrup-you can also top it with bananas or berries. so simple and satisfying, and-happy kids!
