spring fennel salad with radish and persian cucumber

ingredients (for 4 servings):
  • 4 -5 small fennel bulbs
  • 8-10 organic radishes
  • 3 persian cucumbers
  • 3-4 green onions
  • small bunch of fresh tarragon

for dressing:

  • 2-3 tablespoons extra virgin olive oil or walnut oil
  • 2 teaspoons dijon mustard
  • sea salt, cracked pepper (to taste)
  • 1 (small) meyer lemon, freshly juiced 
  • 1-2 teaspoons raw organic honey
  • whisk together
