french toast, happy kids

some times when i want to make my kids happy (with minimal effort) by making them a special breakfast (as in, when they complain that i never make them a good breakfast while all the other parents are serving up feasts every morning), i whip up (it’s seriously that fast) a quick and easy french toast. the best bread to use is a nice brioche, but any sliced bread you have on hand (including sprouted wheat-but not for the kids, that’s pushing it) works perfectly. 
for 1 toast: you quickly whisk (with a whisk or  fork) together:
topped with berries, and drizzled with agave nectar

1 large organic egg
1/4 cup milk (or cream if you are not worried about the extra fat/calories)
1/2 tsp cinnamon
a pinch of sea salt

1 tbsp butter (or coconut oil) for frying

soak your bread in the mixture for about a minute on each side. melt butter in your frying pan and (carefully) transfer your soaked bread to the pan. fry (on medium heat) for about 1-2 minutes on each side being careful it doesn’t burn. serve with maple or agave syrup-you can also top it with bananas or berries. so simple and satisfying, and-happy kids!
